The Menu
Entrée
Tomato – or not Tomato?
Bocconcini with tomato skin, heirloom cherry tomatoes, basil gel, kalamata powder, avocado and green leaves
This dish speaks to Erik Johansson’s images that seem real, yet are not all that they seem – not only does the dish deceive by looks, it’s construction also encompasses meticulous detail and technique to produce the final result on the plate.
Main
Touch of Gold
Southern Range Scotch fillet slow cooked and smoked with gold edible leaves on a colour range of sauces, served with side salad
This dish presents a colour palette reminiscent of the Winter Bloom series of works, fluid and bright on the plate, and in a shout out to Aldona’ Kmiec’s Ballarat ties, features a touch of gold.
Dessert
Sweet Forest
“Amanita Muscaria” mushroom white chocolate mousse, chocolate soil and mango sorbet
Directly speaking to Selina Ou’s work “the Pines”, this dish presents the forest floor on a plate, and with Selina’s work featuring her children, this dish brings out the little child within all of us.
